Sear the Roast: 1 In a large skillet, heat olive oil over medium-high heat. 2 Season both sides of the chuck roast with 1/2 of the salt and pepper. 3 Sear the roast for 4-5 minutes on each side until golden brown. Remove from heat and transfer to the slow cooker or Dutch oven. Prepare the Ingredients: 5 Add the sliced onions, garlic, thyme, Worcestershire sauce, beef stock, and the remaining salt and pepper to the slow cooker or Dutch oven. Cook the Roast: 7 Slow Cooker: Cover and cook on low for 8-10 hours, or until the roast is fork-tender. 8 Oven: Preheat the oven to 325°F (163°C). Cover the Dutch oven and cook for 3-5 hours, or until the roast is fork-tender. Make the Gravy: 10 Remove the roast from the slow cooker or Dutch oven. 11 In the slow cooker or Dutch oven, increase the heat to high (slow cooker) or medium (stovetop). 12 In a small bowl, mix the cornstarch and water to create a slurry, then stir into the cooking liquid. 13 Stir the gravy until it thickens, about 10 minutes.
